  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • Oil for frying

For the sweet and sour sauce:

  • 1/2 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/4 cup water

  1. In a small bowl, mix together all the ingredients for the sweet and sour sauce until well combined. Set aside.
  2. In a shallow dish, season the flour with salt and pepper. Coat each piece of chicken in the flour mixture, shaking off any excess.
  3. Heat oil in a large skillet over medium-high heat. Fry the coated chicken pieces until they are golden brown and cooked through, about 5-6 minutes per side. Remove from the skillet and set aside.
  4. In the same skillet, add a little more oil if needed. Sauté the diced onion, red bell pepper, and green bell pepper until they are tender, about 3-4 minutes.
  5. Add the pineapple chunks to the skillet with the vegetables and cook for another 2 minutes.
  6. Pour the sweet and sour sauce over the vegetables and pineapple. Stir well and bring to a simmer.
  7. Return the cooked chicken to the skillet, stirring until the chicken is well coated with the sauce.
  8. Allow everything to simmer together for a few minutes until the sauce thickens slightly and everything is heated through.
  9. Serve the sweet and sour chicken hot over steamed rice or noodles. Enjoy your homemade takeout-style meal!
