  • 4 boneless, skinless chicken breasts
  • 1 cup spinach leaves, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Toothpicks

  1. Preheat your oven to 375°F (190°C).
  2. In a small skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.
  4. In a mixing bowl, combine the cooked spinach, chopped sun-dried tomatoes, and crumbled feta cheese. Stir until evenly mixed.
  5. Using a sharp knife, carefully slice a pocket into each chicken breast, being careful not to cut all the way through. Season the inside of each pocket with salt and pepper.
  6. Stuff each chicken breast with the spinach, tomato, and feta mixture, dividing it evenly among the breasts. Secure the openings with toothpicks to keep the filling inside.
  7. Season the outside of the stuffed chicken breasts with salt and pepper.
  8. Heat a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts to the skillet and sear until golden brown on each side, about 2-3 minutes per side.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  10. Once cooked, remove the skillet from the oven and let the chicken rest for a few minutes before serving. Remove the toothpicks before serving.
  11. Serve the stuffed chicken breasts hot, alongside your favorite sides. Enjoy!
