A delightful dessert that combines the tartness of rhubarb with the sweetness of strawberries, all topped with a buttery cobbler crust. This recipe is sure to become a favorite for any occasion!

  • 4 cups sliced rhubarb
  • 4 cups sliced strawberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

For the cobbler topping:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
  • 1/2 cup milk

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar sized dish.
  2. In a large bowl, combine the sliced rhubarb and strawberries. Add sugar, cornstarch, and vanilla extract. Toss until the fruit is evenly coated. Transfer the mixture to the prepared baking dish and spread it out evenly.
  3. In another bowl, mix together the flour, sugar, baking powder, and salt for the cobbler topping. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined, being careful not to overmix. The dough will be sticky.
  5. Drop spoonfuls of the cobbler topping over the fruit mixture, covering it as evenly as possible.
  6. Bake in the preheated oven for 40-45 minutes, or until the fruit is bubbling and the cobbler topping is golden brown.
  7. Remove from the oven and let it cool slightly before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
  8. Enjoy your delicious homemade strawberry rhubarb cobbler!
