Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup all-purpose flour

For the strawberry topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions:

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter for the crust. Press the mixture firmly onto the bottom of the prepared pan. Bake for 10 minutes, then remove from the oven and let it cool.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and flour until well combined and smooth.
  5. Pour the filling over the cooled crust, spreading it evenly. Tap the pan gently on the counter to release any air bubbles.
  6. Bake in the preheated oven for 45-50 minutes, or until the center is almost set. The edges should be slightly golden.
  7. Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Then run a knife around the edges to loosen the cheesecake from the pan. Let it cool completely on a wire rack, then refrigerate for at least 4 hours or overnight.
  8. While the cheesecake is chilling, prepare the strawberry topping. In a saucepan, combine sliced strawberries, sugar, cornstarch, and water. Cook over medium heat, stirring constantly until the mixture thickens and the strawberries soften, about 5-7 minutes. Remove from heat and let it cool completely.
  9. Once the cheesecake is chilled and the strawberry topping is cooled, spread the strawberry topping over the cheesecake.
  10. Slice and serve chilled. Enjoy your delicious homemade strawberry cheesecake!
