Slow Cooker Chicken Recipe

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup potatoes, diced
  • 1/2 cup frozen peas
  • 2 tablespoons cornstarch (optional, for thickening)


  1. Place the chicken breasts in the bottom of the slow cooker.
  2. In a small bowl, mix together the chicken broth, diced onion, minced garlic, thyme, rosemary, oregano, paprika, salt, and pepper. Pour the mixture over the chicken.
  3. Add the carrots, celery, and potatoes to the slow cooker, spreading them evenly around the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and the vegetables are tender.
  5. If desired, mix the cornstarch with a little water to create a slurry, then stir it into the slow cooker to thicken the sauce during the last 30 minutes of cooking.
  6. Stir in the frozen peas during the last 10 minutes of cooking.
  7. Once everything is cooked through and the sauce is thickened, serve the chicken and vegetables hot, optionally garnished with fresh herbs like parsley or chives.
