Lemon Coconut Cream Squares Recipe

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar

For the filling:

  • 1 (14 oz) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 cup shredded coconut
  • 1 teaspoon vanilla extract

For the topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Additional shredded coconut and lemon zest for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan and line it with parchment paper, leaving some overhang on the sides for easy removal later.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar for the crust. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake the crust for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  4. In another mixing bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, shredded coconut, and vanilla extract until well combined.
