Italian Drunken Noodles Recipe

Italian drunken noodles, also known as “Drunken Spaghetti,” is a flavorful pasta dish cooked with a splash of wine. This recipe combines the richness of Italian flavors with the comforting goodness of pasta. Perfect for a cozy dinner at home or entertaining guests.

  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine (such as Pinot Grigio)
  • 1/4 cup chicken or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh basil leaves for garnish (optional)

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add sliced onion and bell peppers to the skillet. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
  4. Stir in the cherry tomatoes and cook for another 2 minutes until they start to soften.
  5. Pour in the white wine and chicken or vegetable broth. Bring to a simmer and let it cook for 5 minutes to allow the flavors to meld together.
  6. Season the sauce with dried basil, dried oregano, salt, and pepper.
  7. Add the cooked spaghetti to the skillet and toss everything together until the pasta is well coated with the sauce.
  8. Cook for an additional 2-3 minutes, allowing the spaghetti to absorb some of the sauce.
  9. Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
