  • 1 whole chicken, cut into pieces (or about 4-6 bone-in, skin-on chicken thighs)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken pieces and brown on all sides, about 5 minutes per side. Remove chicken from the pot and set aside.
  2. In the same pot, add diced onion, carrots, celery, and garlic. Sauté until vegetables are tender, about 5 minutes.
  3. Return the chicken pieces to the pot. Pour in the chicken broth and add the bay leaf. Season with salt and pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-40 minutes, until the chicken is cooked through and tender.
  4. While the chicken is cooking, prepare the dumplings. In a mixing bowl, combine flour, baking powder, and salt. Stir in milk until a soft dough forms.
  5. Drop spoonfuls of the dumpling dough into the simmering broth. Cover and cook for 15 minutes, or until the dumplings are cooked through and fluffy.
  6. Remove the bay leaf from the pot and discard. Taste the broth and adjust seasoning if needed. If desired, shred some of the chicken into smaller pieces.
  7. Ladle chicken and dumplings into bowls, garnish with chopped parsley if using, and serve hot. Enjoy!
