  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz wide egg noodles
  • 4 cups chicken broth
  • 2 cups sliced carrots
  • 1 cup sliced celery
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

  1. In the crockpot, combine chicken, carrots, celery, onion, garlic, thyme, rosemary, parsley, salt, and pepper.
  2. Pour chicken broth over the ingredients in the crockpot. Stir to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and vegetables are tender.
  4. About 30 minutes before serving, add the egg noodles to the crockpot and stir to combine. Cover and continue cooking until noodles are tender.
  5. If you prefer a thicker broth, mix cornstarch and water in a small bowl until smooth. Stir the mixture into the crockpot during the last 15 minutes of cooking.
  6. Once noodles are cooked and broth is thickened (if using), taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh chopped parsley. Enjoy the cozy deliciousness!
