Easy Beef Enchiladas Recipe

These beef enchiladas are a delicious and satisfying meal that’s perfect for busy weeknights.   • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) can red enchilada sauce
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 8 small flour tortillas
  • Salt and pepper, to taste
  • Optional toppings: chopped cilantro, diced tomatoes, sliced olives, sour cream


  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with non-stick spray.
  2. In a large skillet, cook the ground beef over medium heat until it’s no longer pink. Drain any excess grease from the skillet.
  3. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for 2-3 minutes, until the onion is softened.
  4. Stir in half of the enchilada sauce and half of the shredded cheese. Season with salt and pepper to taste. Cook for another 2-3 minutes until everything is heated through and well combined.

  7. Cover the dish with aluminum foil and bake in the preheated oven for 20-25 minutes, until the enchiladas are heated through and the cheese is melted and bubbly.
  8. Remove the foil and bake for an additional 5 minutes, until the cheese is golden brown.
  9. Serve the enchiladas hot, garnished with your favorite toppings such as chopped cilantro, diced tomatoes, sliced olives, and sour cream.
