Decadent Chocolate Mousse Cake Recipe

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the Chocolate Mousse:

  • 8 oz semisweet chocolate, chopped
  • 2 cups heavy cream, divided
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract

  • Fresh berries
  • Whipped cream


  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
  4. Stir in the boiling water until the batter is well combined. The batter will be thin, but that’s okay.
  5. Pour the batter evenly into the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  7. While the cakes are cooling, prepare the chocolate mousse. In a heatproof bowl, melt the chopped chocolate with ½ cup of heavy cream over a double boiler or in the microwave, stirring until smooth. Let it cool slightly.
  8. In another bowl, whip the remaining 1 ½ cups of heavy cream with granulated sugar and vanilla extract until stiff peaks form.
  9. Gently fold the melted chocolate mixture into the whipped cream until well combined and smooth. Be careful not to deflate the whipped cream.
  10. Once the cakes are completely cooled, place one layer on a serving plate or cake stand. Spread a generous layer of chocolate mousse over the top.
  11. Carefully place the second cake layer on top of the mousse. Use the remaining mousse to frost the top and sides of the cake.
  12. Refrigerate the cake for at least 2 hours, or until the mousse is set.
