  • 1/2 cup (1 stick) unsalted butter
  • 1 cup water

  • 1 teaspoon vanilla extract

  2. Prepare the Dough: In a medium saucepan, combine the butter, water, and salt. Bring to a boil over medium heat. Once the butter has melted and the mixture is boiling, reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
  3. Cool the Dough: Remove the saucepan from the heat and let it cool for 5 minutes.
  4. Add Eggs: Add the eggs, one at a time, beating well after each addition. The dough should be smooth and glossy.
  5. Pipe the Dough: Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds onto the prepared baking sheet, leaving space between each one.
  6. Bake: Bake the puffs in the preheated oven for 25-30 minutes, or until they are puffed and golden brown. Avoid opening the oven door while baking, as this can cause the puffs to collapse.

  9. Fill the Puffs: Once the puffs are cool, use a sharp knife to slice them in half horizontally. Pipe or spoon the whipped cream filling into the bottom halves of the puffs, then place the top halves back on.
