Ingredients

  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts or pecans (optional)

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans or line them with parchment paper.
  2. In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until all ingredients are thoroughly combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly mixed.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. If using, fold in the chopped nuts until evenly distributed throughout the batter.
  6. Divide the batter evenly between the prepared loaf pans, spreading it out evenly.
  7. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the pans from the oven and let the zucchini bread cool in the pans for about 10 minutes.
  9. After 10 minutes, carefully transfer the loaves to a wire rack to cool completely before slicing and serving.
  10. Enjoy your homemade zucchini bread with a spread of butter or cream cheese, if desired. Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
