Directions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until well combined and press the mixture onto the bottom of the prepared springform pan to form the crust. Use the back of a spoon or a flat-bottomed glass to press the crust firmly.
  3. In a large mixing bowl, beat the cream cheese and 1 1/4 cups granulated sugar until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the flour and sour cream to the cream cheese mixture, beating until smooth and well combined.
  5. Pour the cheesecake batter over the prepared crust in the springform pan, smoothing the top with a spatula.
  6. Place the springform pan in the preheated oven and bake for 60-70 minutes, or until the edges are set but the center still jiggles slightly.
  7. Turn off the oven and leave the cheesecake inside with the door closed for an additional hour to cool slowly. This helps prevent cracking.
  8. Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
  9. Before serving, run a knife around the edge of the cheesecake to loosen it from the pan. Carefully remove the sides of the springform pan.
