Classic Cheesecake Recipe

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream


  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture onto the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese until smooth using an electric mixer. Add 1 1/4 cups sugar and vanilla extract, and beat until well combined.
  4. Add eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
  5. Stir in sour cream and heavy cream until the mixture is smooth and creamy.
  6. Pour the batter over the prepared crust in the pan. Smooth the top with a spatula.
  7. Place the cheesecake on a baking sheet and bake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly.
  8. Turn off the oven, crack the oven door open, and let the cheesecake cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or preferably overnight, before serving.
  10. Before serving, run a knife around the edge of the pan to loosen the cheesecake, then release the sides of the springform pan.
