  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.
  2. In a medium bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared springform pan.
  3. In a large bowl, beat the cream cheese and 1 1/4 cups sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, mix together the sour cream and flour until smooth. Gradually add this mixture to the cream cheese mixture, beating until well combined.
  5. Pour the batter over the crust in the springform pan, spreading it out evenly.
  6. Place the cheesecake in the preheated oven and bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside with the door closed for 1 hour to cool slowly.
  8. After an hour, remove the cheesecake from the oven and run a knife around the edges to loosen it from the pan. Let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
  9. Serve slices of cheesecake plain or with your favorite fruit topping. Enjoy!
