Chicken, Potatoes, and Spinach with Garlic Parmesan Recipe

This hearty dish combines tender chicken, wholesome potatoes, and nutritious spinach, all brought together with the savory flavor of garlic and Parmesan cheese. It’s a satisfying meal that’s easy to prepare and sure to please the whole family.


  • 4 boneless, skinless chicken breasts
  • 4 medium-sized potatoes, washed and cubed
  • 2 cups fresh spinach leaves
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed potatoes, minced garlic, olive oil, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the potato mixture evenly on a baking sheet lined with parchment paper or aluminum foil. Place in the preheated oven and bake for about 20-25 minutes, or until the potatoes are golden brown and tender.
  4. While the potatoes are baking, season the chicken breasts with salt and pepper to taste.
  5. In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-8 minutes on each side, or until they are cooked through and golden brown on the outside. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the fresh spinach leaves and cook for 2-3 minutes, or until wilted.

  8. To serve, place a portion of the roasted potatoes on each plate, top with a cooked chicken breast, and spoon the sautéed spinach over the chicken. Garnish with chopped fresh parsley if desired.
