Chicken and Cornbread Recipe

This recipe combines the savory comfort of tender chicken with the sweet crunch of cornbread for a deliciously satisfying meal.

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Cornbread:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 2 eggs

  1. Preheat your oven to 375°F (190°C). Grease a baking dish for the chicken and a separate baking dish for the cornbread.
  2. In a small bowl, mix together the minced garlic, paprika, dried thyme, salt, and pepper. Rub this seasoning mixture evenly over the chicken breasts.
  3. Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned chicken breasts and cook until browned on both sides, about 3-4 minutes per side.
  4. Transfer the browned chicken breasts to the prepared baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center.
  5. While the chicken is baking, prepare the cornbread. In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt.
  6. In another bowl, whisk together the milk, melted butter, honey, and eggs until well combined.
  7. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  8. Pour the cornbread batter into the greased baking dish and spread it evenly.
  9. Place the cornbread in the oven and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  10. Once the chicken and cornbread are both done baking, serve them together for a comforting and satisfying meal.

Enjoy your delicious chicken and cornbread!
