  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (11.5 oz) Doritos, crushed
  • Optional toppings: chopped fresh cilantro, diced tomatoes, sliced black olives, diced avocado, sour cream

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish and set aside.
  2. In a large skillet, brown the ground beef over medium heat, breaking it apart with a spatula as it cooks. Drain any excess grease.
  3. Add the diced onion and bell pepper to the skillet with the ground beef. Cook until the vegetables are softened, about 5 minutes.
  4. Stir in the taco seasoning, diced tomatoes with green chilies, cream of chicken soup, and sour cream until well combined. Cook for an additional 5 minutes, allowing the flavors to meld together.
  5. Spread half of the crushed Doritos in an even layer on the bottom of the prepared baking dish.
  6. Spoon half of the ground beef mixture over the layer of Doritos, spreading it out evenly.
  7. Sprinkle half of the shredded cheddar cheese over the ground beef mixture.
  8. Repeat the layers with the remaining crushed Doritos, ground beef mixture, and shredded cheddar cheese.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Serve hot, garnished with your choice of optional toppings if desired. Enjoy!
