Ingredients

  • 2 pounds stewing beef, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 pound potatoes, peeled and diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. In a large bowl, season the stewing beef with salt, pepper, and flour, tossing to coat evenly.
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned beef cubes in batches and brown them on all sides. Remove the browned beef and set aside.
