  • 2 pounds stewing beef, cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 pound potatoes, peeled and diced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Chopped fresh parsley for garnish (optional)

  1. In a large bowl, season the stewing beef with salt, pepper, and flour, tossing to coat evenly.
  2. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned beef cubes in batches and brown them on all sides. Remove the browned beef and set aside.
  3. In the same pot, add the diced onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes.
  4. Return the browned beef to the pot, along with the carrots, celery, potatoes, and frozen peas.
  5. Pour in the beef broth and red wine (if using), ensuring that the ingredients are submerged.
  6. Add the bay leaves, dried thyme, and dried rosemary. Stir to combine.
  7. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 ½ to 2 hours, or until the beef is tender and the vegetables are cooked through, stirring occasionally.
  8. Once the stew is ready, taste and adjust the seasoning with salt and pepper if needed.
  9. Serve hot, garnished with chopped fresh parsley if desired. Enjoy your delicious Best Ever Beef Stew!
