Beef Roast Recipe

Ingredients

  • 1 (3 to 4 pounds) beef roast (such as chuck roast or round roast)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons all-purpose flour (for gravy, optional)

Directions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the beef roast dry with paper towels. Season it generously with salt and pepper on all sides.
  3. In a large oven-safe Dutch oven or roasting pan, heat the olive oil over medium-high heat. Once hot, add the beef roast and sear it on all sides until nicely browned, about 3-4 minutes per side. Remove the roast from the pan and set it aside.
  4. In the same pan, add the chopped onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  5. Deglaze the pan by pouring in the beef broth and red wine (if using). Scrape up any browned bits from the bottom of the pan with a wooden spoon.
  6. Return the beef roast to the pan, nestling it among the vegetables. Add the rosemary, thyme, and bay leaves to the pan.
  7. Cover the pan with a lid or aluminum foil and transfer it to the preheated oven. Roast the beef for 2 1/2 to 3 hours, or until it is fork-tender.
  8. Once the beef is cooked, remove it from the oven and transfer it to a cutting board. Tent it loosely with foil and let it rest for 10-15 minutes before slicing.
  9. If you’d like to make gravy, strain the pan juices into a saucepan, discarding the solids. Place the saucepan over medium heat and whisk in the flour until smooth. Cook, stirring constantly, until the gravy has thickened, about 5 minutes.
